About this calculator
A brine's strength is the weight of salt as a percentage of the total weight of the solution: salt = water × p ÷ (100 − p). Typical strengths: meat and poultry 5–8%, fermented vegetables 2–3.5%, pickles 5%, olives 8–10%. Table salt packs about 18 g per tablespoon, kosher salt (Diamond Crystal) about 8 g.
